Chef Chalee Kader is half Thai, half Indian and was educated in the US before returning to Bangkok in 2002. He is chef-owner of 100 Maheseth (Bib Gourmand, MICHELIN Guide Thailand 2020 & 2021), Holy Moly, Mickey’s Diner, WANA-YOOK (2021), Surface, The Beer Bridge, Knock & more.
Chef Chalee Kader is a talented chef, restaurateur, and consultant with decades of top-level culinary experience. His specialties include Thai (with an onus on North and Northeastern Thai food) and French cuisine as well as food sustainability. He has achieved a series of prestigious honors including being listed in the Michelin Bib Gourmand in 2019 and 2020.
Half Thai, Half Indian and educated in the US, Chalee Kader was born in Bangkok. Growing up, his Mom was Chef on weekdays, cooking up Thai Chinese dishes (stir fries, curries, soups and salads) but on the weekends, his father would often take over, concocting dishes from southern India. Food took center stage in his family and his parents were staunch food critiques whenever they ate out.
Following the Asian financial crisis of 1997, Chalee was sent to live with family friends who owned a restaurant in America. There he had the opportunity to work in the restaurant, initially as a busboy and washing dishes but after a few years he eventually found his way into the kitchen and that is when the passion was ignited.
Culinary school, however, was beyond Chalee’s financial means, and although he is associated with some of Bangkok’s finest and most innovative restaurants, he has no formal chef training; his wisdom is founded purely on passion and experience with fresh, creative ideas infused into every dish.
On returning to Bangkok from America in 2002, Chalee initially faced challenges gaining a foothold in the restaurant world so worked for a food importer before returning to his calling. He worked under Chef Carlos Gaudencio (then Chef de Cuisine at Le Normandie, Manadarin Oriental Bangkok) and as Chef to the French Ambassador in Bangkok as well.
